This Classic Range Utility Knife handmade in Japan and is made from 34 layers of Damascus steel with a proprietary VG-MAX cutting core. The blade has been hand sharpened to a 16-degree double-bevel edge (32-degree comprehensive) and with its 6in. (15.2cm) length blade it is truly versatile. In size, the Shun Classic Utility Knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter.
