Collagen and Gelatin: Bones and connective tissues are rich in collagen, a protein that provides structure to bones, cartilage, and skin. During the simmering process, collagen is broken down into gelatin, which gives bone broth its characteristic gel-like consistency when cooled. Gelatin provides a range of benefits, including supporting healthy digestion, promoting joint health, and aiding in skin elasticity.

Ingredients
2 kg 4 2/5 lb of beef bones (marrow bones, knuckle bones, or a combination)
Water
5 g 1/6 oz Salt
Directions
- Preheat your oven to 200°C (400°F). Place the beef bones on a baking sheet and roast them in the oven for about 30 minutes. This step helps enhance the flavor of the broth.
- Transfer the roasted bones to a large stockpot.
- Fill the pot with enough water to cover the bones.
- Place the pot on the stove over low heat and bring it to a gentle simmer. Do not let it boil vigorously, as this can make the broth cloudy.
- Skim off any foam or impurities that rise to the surface during the simmering process.
- Let the broth simmer for at least 8 hours, but preferably 24-48 hours. The longer simmering time allows for more flavor extraction from the bones.
- Periodically check the pot and add more water if needed to ensure the bones remain covered.
- Once the broth has simmered to your satisfaction, remove it from the heat and allow it to cool slightly.
- Strain the broth through a fine-mesh sieve or cheesecloth into a large bowl or container to remove any bone fragments or sediment.
- Let the broth cool completely, then refrigerate it overnight. This allows the fat to rise to the surface and solidify, making it easier to remove. Skim off the solidified fat with a spoon.
- Reheat the broth as needed for use in recipes or store it in airtight containers in the refrigerator for up to 5 days. You can also freeze it for longer storage.
