Bush Tomato and Chilli Relish

Ingredients
2 each 2 each chillies finely sliced
6 each 6 each Bush Tomatoes reconstituted
4 each 4 each tomatoes peeled and diced (how to peel see tips)
2 cloves 2 cloves garlic finely sliced
2 tbsp 2 tbsp brown sugar
4 tbsp 4 tbsp red wine vinegar
1 small 1 small red onion finely sliced
3 tbsp 3 tbsp olive oil
Dash Dash soy sauce
Salt/pepper
Directions
- To make this relish, heat the oil in a medium saucepan over high heat.
- Add the onions, chillies and tomatoes reduce the heat to medium, and cook until tomatoes are mushy.
- Add the garlic, soy, salt, pepper and the sugar, and let the sugar dissolve.
- Add the vinegar cook for a further 8 – 10 minutes on low heat.
- This can be stored in a sterilised jar or air tight container for many weeks.
