How to Correctly Hold Your Knife

This short how-to video displays the correct way to hold your knife.

Correct knife-holding technique will allow you to make more accurate cuts, more easily, and more safely.

When using a chef’s knife, the correct grip is essential for control, safety, and reducing fatigue. Here’s the proper technique:

  1. Pinch Grip: Hold the blade itself, not just the handle. Pinch the blade between your thumb and the side of your index finger, with your remaining fingers wrapped around the handle. This gives better balance and control.
  2. Claw Grip for the Other Hand: When cutting, use a claw grip with your opposite hand. Curl your fingers inward and rest the flat of the blade against your knuckles, guiding the cut and protecting your fingers.

Tips for Handling:

  • Relax your grip: Don’t hold the knife too tightly. This will minimize strain on your wrist and improve your cutting technique.
  • Keep the tip of the knife down: When slicing, rock the knife with the tip slightly down on the board, and let the blade do the work.
  • Practice with control: Don’t rush, especially when learning proper knife skills. Speed comes with practice, and precise cuts improve overall efficiency.
