Deep-Fried Crocodile Stuffed Crab Shell (Crocodile Pu Ja) Thai
  • For the stuffing
  • 120g Crocodile mince
  • 80g Blue Swimmer Crab meat
  • 4 Blue swimmer crab shells (head- cleaned)
  • 40g water chestnuts finely diced
  • 20g shallots finely chopped
  • 3 tspn potato or corn flour
  • 4 coriander roots, washed and finely chopped
  • 1 tspn freshly ground black pepper
  • 4 eggs, beaten, for dipping
  • For the seasoning
  • 4 tspn castor sugar
  • 4 tbspn oyster sauce
  • 4 tbsn vegetable oil
  • 2 tspn light soy sauce
  1. Ready a steamer pot, bring water to the boil.
  2. Combine all the stuffing ingredients together in a mixing bowl.
  3. Mix until all well combined.
  4. Evenly spoon the mix into the crab shells.
  5. Now place the crab shells into the top part of the steamer and steam for 5-6 minutes.
  6. Set aside and allow to cool.
  7. Heat deep fryer or about 1 litre of vegetable oil in a wok to approx 180ÂșC.
  8. Next dip each shell into the beaten egg and coat well.
  9. Fry the shells for about 5-6 minutes until cooked and slightly golden.
  10. Allow to drain on paper towel.
  11. Now combine all the seasoning mix together and serve with the Pu Ja.
