Christmas Shortbread Biscuits
  • 1 cup plain flour
  • ¼ cup sugar
  • ¼ cup icing sugar
  • ¼ teaspoon salt
  • ½ teaspoon vanilla
  • 3 teaspoon water
  • ¾ cup unsalted butter
  • Some chocolate and decorations
  1. Preheat oven to 190C.
  2. Pulse together all the dry ingredients in a food processor until they are pulverised.
  3. Add vanilla, water, and butter. Pulse together until a dough is formed.
  4. Form the dough into a flat disc onto a piece of wax or parchment paper. place another sheet over the top and roll to smooth to about 5mm thick and wrap.
  5. Freeze now, or chill for at least 30 minutes.
  6. When chilled, slice or use cutters into desired shapes.
  7. Place on baking sheets and bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks.
  8. Decorate with chocolate and sugar decorations.
